Pizza Chicken in the Crockpot

Okay, I don't have a photo of this recipe because I think it is hard to make crockpot meals look good.  But, make this anyway, because it was SO easy and tasted SO good.

Pizza Chicken
(serves 3)

3 raw chicken breasts
1 jar pizza sauce (14 oz approx)
20 slices turkey pepperoni
1/2 cup shredded mozzarella cheese.

Layer in crockpot.  Cook on high for 4 hours or on low for 7 hours.  Serve with breadsticks to dip into the extra sauce.

See, how easy is that?  You could add your favorite pizza toppings, but I like mine best with plain pepperoni.  I think next time I will add the cheese towards the end of cooking instead of at the beginning because it disappears a little.  But it still tasted good.

  1. Jen, Christy, Kate, maybe Erin (explain later) and I have used the cookbook, Not Your Mother's Slow Cooker Cookbook by Beth Hensperger a lot. It is a paperback and although fat, not expensive. I first bought it for Jen when she started using a slow cooker as a bit of a joke as she was never enamored with my hunk of beef, potatoes, onions and carrots crockpot dinners. I also bought Erin a copy as I wanted to have the Cockaleekie Soup while I was new baby cooking in SF. The Crock Pot is getting us through our weeks of being ovenless as we redo the kitchen. Recently, at the Borders liquidation I bought the Not Your Mother's Casserole Cookbook which has a different author, but Jen says it is definitely worth buying.

  3. I actually own the NYMSC cookbook, but I don't think I've made anything out of it. I'll have to reach out to your girls to see what their favorite recipes are. I have to be a little particular about crockpot recipes because Ben won't eat potatoes.

    Kim, use raw chicken breasts. See, so easy!
